Carrot Extract Enables Fake Ghee to Bypass Raman Spectroscopy Tests

Researchers at IIT (BHU) have discovered that adding beta-carotene-rich carrot extract to non-dairy fats like palm oil allows them to mimic the Raman spectral signature of authentic cow ghee. This finding exposes critical vulnerabilities in Raman spectroscopy, a widely used analytical quality test by food regulators to detect adulteration in dairy products.
